The beginner mistake

Most people start meal prep by cooking five complete, identical dinners on a Sunday. By Wednesday they cannot face the fourth one, and the conclusion they draw is that they are bad at meal prep. They are not. The format was wrong.

The version that survives contact with a real week is component prep: a grain, a protein, a tray of roast vegetables, a sauce with some acidity in it. Four things that combine differently each night.

Prep components, not meals. A tray of roast vegetables becomes three dinners. Three finished dinners become three dinners you are bored of.

A first week that works

Cook one pot of a grain: rice, farro, pearl barley, whatever you like. Roast one large tray of vegetables with whatever is cheap and in season. Cook one protein, a tray of chicken thighs, a pan of lentils, a batch of hard boiled eggs. Make one sauce with something sharp in it, yoghurt and lemon, or tahini and vinegar.

Monday is a bowl. Tuesday is the same things in a wrap. Wednesday is the vegetables blitzed into a soup with the remaining stock. Thursday is eggs on toast, because Thursday usually is.

That is ninety minutes of work and it does not produce a single container you dread.

The food safety part nobody includes

Cool cooked food quickly, ideally within about ninety minutes, and refrigerate it. Use leftovers within two days and reheat once, until steaming hot throughout. That is standard UK Food Standards Agency and NHS guidance and it is not negotiable.

Rice deserves its own line. Spores survive cooking and multiply at room temperature, so cool it fast and refrigerate it quickly rather than leaving the pot out to cool on its own schedule.

Freezing solves the two day limit. Freeze half of anything you make in the portion you would actually eat, not in a block the size of a brick.

What we are not claiming

We are not claiming meal prep saves a specific amount of money or time, because that depends entirely on what you were doing instead. We are not claiming it is necessary. Plenty of people eat well by cooking every evening and enjoying it.

The case for it is narrower: it removes the Thursday evening decision, which is where most weeks fall apart.
