Ginger syrup keeps for two weeks and turns sparkling water into something you actually want at six in the evening.
We make no health claim for it beyond replacing a second glass of wine.

Ingredients
- 100g fresh ginger, sliced (no need to peel)
- 150g honey or caster sugar
- 250ml water
- Juice of 3 lemons
- Juice of 1 orange
- Sparkling water and ice, to serve
Method

Simmer the ginger, sweetener and water for 15 minutes, then leave to cool and infuse for an hour.

Strain, pressing the ginger firmly. Stir in the citrus juice.

Keep refrigerated in a bottle. Serve one part syrup to four parts sparkling water over plenty of ice.
Notes from the kitchen
- Add a strip of rosemary or a few black peppercorns to the simmer for a drier finish.
- Warm with hot water instead when you have a cold — it will not shorten it, but it is comforting.
